  • my first smoked cheese

    I recieved my A-maze-in-smoker from Todd on Saturday



    yesterday I put it to work,the one I am painting/I ended up soaking it in basalmic vinegar and red wine



    smoked and bagged




    oH by the way THANK TODD that smoker worked awsome!!

    I had to try the provalone


    its very good I cant wait to taste it in a couple weeks

    so do I freeze it or just leave it in the fridge

      yep, fridge... the freezer will make it nearly impossible, or greatly reduce the speed of the smoke permiating the cheese. the longer you let it sit, the more mellow the smoke flavor will become. I was actualyl just asked to make some more by a couple of co-workers yesterday... i need to pull mine out of the freezer and git to smoking.

        Man are you ever gonna be hooked on this stuff. I love my AMS. Don't forget, you can smoke alot of stuff - flour, nuts (not your own unless you're freaky like that) salt, spices, corn, mmmmm, smoked corn. Have fun!

          oh yea cant wait to try smoking some spices and almonds with it all the almonds I did over Christmas turn out ok but I needed to watch over them really close I did them in my gasser, but now they will be done right

              Great job there Jim. Word of advice.....Depending on how much cheese you eat, start another batch BEFORE this one is gone.

              Trust me on this one, you don't want to be without some on hand.

                      I love smoked cheese and on your next one, try smoking some fresh mozzarella in water - just let it dry for about an hour then into the smoker and the best part is you get to eat it as soon as it cools back down with no waiting - here is a pic of one I did recently so you can see what I am talking about

                        From one Jim to another, you'll be hooked for sure. I let 'em go 3 weeks in the fridge.
                        Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
                        My best asset however is the inspiration from the members on this forum.

                          I've smoked salt, peppercorns and paprika.
