View Full Version : Spatchcocked Blackened Reverse Sear Chicken And Introducing The Chicken On Fire Cam!
Fishawn 03-15-2011, 10:12 AM We aim to please when cooking around here for the family, so the 16 y/o son wanted BBQ chicken with crispy skin..... Well, he got the crispy skin allright, as old pops got stuck talking to the neighbor & forgot about his quick reverse sear project :whistle: ....... So I introduce the chicken on fire cam :banana_smiley: (patent pending)..... I had to use my rub :eek:, as I'm just about outta Mad Hunky & am saving it for the ribs in the fridge tonight. Rich I will get on it ASAP. .... Maybe all the powdered gasoline (Butcher & Packer) in my rub helped ignite this bird :noidea: ...... Anywho, it actually looks worse than it tasted & son #1 & I both like it, but only a little of the skin for me.

Whisky Fish 03-15-2011, 04:29 PM Nothin wrong there although I mighta abandoned the crispy skin and slathered some SBR on there and let it go awhile. It kinda reconstitutes the burned skin and gives it a "coffee" kinda toasted flavor. But scrapin works too:thumb:
