Crust:
2 C - Gram Cracker Crumbs
1/4 C - Melted Butter
2 T - Sugar
Mix well together and line bottom and 1/4 the way up the wall of a spring form pan.
Cake Batter:
2 ea - Bricks of Cream Cheese
1 ea - 20 can of Sweet Potatoes
1 ea - Can of Sweetened Condensed Milk
1 C - Sugar
3 - eggs beaten
2 T - Corn Strarch
1 T - cinnamon
2 t - nutmeg
1 t - Vanilla extract
Blend all ingredients well together and poor into crust lined spring form pan. Place on a sheet pan and bake on center oven rack for 90 minutes @ 300o. Cool in refrigerator.
Topping:
2 C - Chopped Pecans
1 Jar - Caramel Sauce(ice cream topping)
Sprinkle generous amount of pecans over slice of cheese cake and top with caramel sauce.
