View Full Version : Green Garlic. First Farmers Market this year

I thought some people might be interested in one of the more unusual crops we grow, green garlic.
Today was our first Farmer's Market and we never have very much to sell.
All we have is over wintered vegetables; spinach and mustard greens, green garlic and horseradish root.

The green garlic is garlic bulbs we plant in the fall like our main crop garlic but we harvest it when it is only one clove. It is very tender and mild so you can use quite a bit more than regular garlic. We plant these very close to each other because they don't get very big.
They taste great with the spinach and, or mustard greens

It's is like a green onion and a walking onion in that it is mild and tender, just garlicy.
This are the first allium that comes in (in Colorado).
It goes, green garlic, scallions (over wintered), walking onions, early onions, baby leeks.....and so on....But green garlic is so yummy and so welcomed. Just like the over wintered spinach.
Finally fresh veggies!!

mmmm sausage, now that's a great idea!
I usually just throw a ton of it in with whatever greens we have that week.
I'm a big believer that whatever is in season 'goes' with anything else that is in season. That said, I've never thought of that in terms of sausage:drooling:
omg you really got me going now.
How about mustard greens and green garlic breakfast sausage? Or, green garlic, spinach and goat cheese chicken sausage?

$2/bundle... damn, I'm setting on a gold.. er green mine!

Mo- is this a specific type of garlic, or just first year shoots? We use "green" garlic a lot, especially this time of year when we are out of cloves. I have a "garlic patch" at the end of my garden that I just dig up what I need each spring, separate like you've shown, plant about 4" apart, and they are my clove garlic for next year. I have no idea what kind of garlic it is, dug up a couple of clumps years ago from the FIL.

That's exactly what what green garlic is. We use really cheap garlic for the 'green'' garlic. It is harvested so early any size or flavor nuance isn't able to develop so we don't waste money on buying good garlic. We do for main crop garlic. Size and flavor is everything so we buy nice garlic for cloves. We sell a clove of garlic for $1.50! That's what I said, one clove for a dollar fifty.

It's funny, people don't know anything about growing so the old school ways of growing, like using green garlic or selling walking onions (we call them Egyptian Walking Onions, sell those for $2.50 a bunch) and people think we are all 'fancy'. I can't believe that people go crazy for walking onions. I think of them as weeds in 'grandmas garden'. But hey, it pays the bills.
Oh, the horseradish we sell for $9.00 a pound. I can't believe it.
I do live in Boulder so the prices are a little higher than Denver or Longmont. But we sell to restaurants for that price.

Had a neighbor that would grow green garlic. They would make a pesto with it that was awful good. No basil just green garlic, pine nutz, Pecorino, olive oil,s&p.

I think they sauteed the chopped green garlic, then pureed with toasted nuts and pecorino,evoo.

Tossed with some cooked pasta it was a spring treat!
