View Full Version : Another pile of Jerky :)

Did a batch last week and was happy with it, so trying this concoction :lol:. Low sodium and hoping the honey, molasses and ginger will give it some teriyaki like flavor.

Here's what I tossed together.

Cure mix recipe for 10lbs of beef (Eye Round).

2 level tsp - Prague Powder #1
10 tsp - Onion Powder
10 tsp - Granulated Garlic
9 Tbsp - Brown Sugar
8 Tbsp - AlsoSalt (salt substitute, nice salty taste)
2 Tbsp - Ground Ginger
3 packets - HerbOx No Sodium Beef Bullion
4 tsp - Red Pepper (Cayenne)
10 tsp - Coarse Ground Black Pepper
3 Tbsp - Ms Dash Original Blend
8 Tbsp - Honey
2 Tbsp - Molasses
Enough apple juice (maybe 1/2 Cup) to make a pancake batter consistency.


Two eye rounds (10lbs of meat trimmed and sliced). Like using the eye round, perfect for against the grain slicing.

Forgot to take a pic of the spice/cure mix :eek:, but here's the meat coated in the mixture. I used a large roaster pan to mix the meat and spice, making sure everything was evenly coated.

Into bags to cure in the fridge for 24hrs.

Looks good keep it coming. Slices of meat look great did you hand trim or do you have slicer?

Thanks Guys :). Maybe I'll get to keep enough of this batch to put some in the freezer.

did you hand trim or do you have slicer?

No meat slicer, so do it by hand. Helps to have a really sharp carving knife to keep things from flopping around :).

10lbs of jerky in the smoker :banana_smiley:.

Here's the finished jerky, took about 8hrs to finish. Yielded 50% of the wet weight, just under 5lbs.

Nice and spicy, good flavor :). Just got to learn how to exercise some self control :lol:

Well Dave, I also had to give you points. That's some of the best looking jerky I've seen in a long time. I'll try your recipe too.:thumb:

Thanks guys, appreciate the nice comments :).

Got about 3lbs stored away in the freezer. So should hold me over for a bit. This stuff is fun to make, and eat too :lol:.

Gave it two 2hrs apple wood smoke and used a 125 temp, forgot to mention that earlier.

I thought this would be real sweet tasting, but the finished jerky had just had a hint of sweet with a nice spicy bite to it. It's a keeper :thumb:.

looks really really good there .but i gotto lagh.the freezer wont work as a self restraint .I know from expierience its so thin and so tastythat you'll end up sneaking it right out of the freezer.
