  • Boner Spatch Cocked Pork Chops Mad Hunky and Dizzy Pig Tsunami Spin Throwdown

    I got me some Mad Hunky in the mail today...Good thing I had some chops thawed out and ready to go. I trimmed those babies up and then spatched 'em with my Henckels Twin Boning Knife...that baby is SHARP!

    I was using the Hunky...Mrs. Engineer wanted to use up a sample that I had of Dizzy Pig's Tsunami Spin. Hunky is on the left...Dizzy Pig on the right.


    Here's the Hunky...complete with my very own label!

    Mrs. Engineer's plate complete with a stripe of Raspberry chipotle and orange marmalade, green beans, and sweet potato fries.

    I know I said throwdown, but I will tell you that I won't be able to pick a winner. They both were really good. The Tsunami spin has large pieces of turbinado sugar and was overall sweeter. The Hunky rules the savory category. We both liked each of the rubs for their own merits.

    I would like to thank Rich for some awesome customer service. Any time I approach him for some rub, he is on it like white on rice. Gonna fire up some ribs this weekend (I'm not going to cock spatch those, however.)

        Dana, the plates look wonderful sir! NICE!!

        I am a big Hunky fan, but I have never tried the Dizzy Pig Tsunami rub... sounds interesting with the chunky turbinado in it. I've done a few rubs with coarse turbinado in it... definitely a different flavor in the end.

                    Bravo! Nice dinner. I'm even not gonna mention the beans

                    I have often thought about a "mild" and "sweet" and even a "spicy" variation, but any changes require a 50 Lb min. order... so I let folks add some sugar or pepper ;{) The mild... well, don't order anything with "hunky" in the name and expect that ;{)

                    While I don't think I have tried the Dizzy Pig stuff, I HAVE heard it is a great rub... the origional anyway. But I'm sure all their stuff is good. They sell ALOT of it. See it at comps too.

                          I loved the thought of the raspberry chipotle orange flavors, that had to be amazing with pork and a good rub.
                          And who doesn't love sweet potato fries?
