  • Whole Smoked baby rabbit - practically still twitching !

    So had the first bbq of the season saturday. Dave said he was going shooting before coming over. I said if you get any rabbits, skin 'em, gut em and I'll throw one on the smoker.
    He turns up with three
    2 small and one big.

    Given the sheer amount of food I already had for dinner (more of which, in it's own thread later) - I decided to throw one of the baby's in for a tester.


    Fresh rabbit - literally dead about an hour - no rigor mortis yet !




    Decided to cook it with herbed butter (italian herbs, pepper, garlic, salt)






    I then wrapped it in some bacon, skewered in place and popped in the smoker.



    Took about 2 hours, cooked to around 160.
    Very tasty. The herbed butter had permeated it all.
    Now I'm one of those people who scorns anyone who says things that aren't chicken taste like chicken.
    Well I gotta eat some humble pie as this tasted almost exactly like chicken. Same texture as well cooked, moist chicken thigh too.
    Thumbs all the way up !

    Sorry about this pic - I'd pulled it to bits for people to sample before I thought about taking a final picture :-)



    Now dave knows he can shoot the babies and eat them too (and from pest control point of view it's much better as they die before they can breed). I'm hoping to have a full on bunny smoke in the future with a smoker full of the little furry buggers :-)

    And yes kids I do mean - Lets eat the easter Bunny !

    Looks pretty good. The last one I got, boned and ground with rib tips and made a couple fatties 1, Italian and 1, Chorizo

      Alex, I have to say that looks great. Even though they taste similar to chicken, the meat is a finer texture making it ideal for folks who have digestive problems. Our rabbit supply has been on the down swing for the last couple of years here, but hopefully they start to recover this fall. I'm giving you for your bunny smoke.

        hmmm, nice rabbit. fresh from the jungles always taste good.
        I am using the wrong rifle. when I hit em, they turn to red mist.nothing but chunks some times too.

          A rabbit smoke? Two weeks before Easter?? Barbaric!!

          Just kidding.

          Looks pretty tasty. Wrapped in bacon, huh? Why not?

          That's funny about the tastes like chicken part.

          We used to raise rabbits when I was a kid. Every now and again, Dad would whack a bunch of them in the head, skin 'em and freeze 'em. They did taste a bit like chicken as I recall. Never had one smoked before though.

                        Good ideas with the bacon and butter. Bunny tends to be a bit dry.

                          Wow our season is not for another 6 months.

                          Points for the bacon wrapped bunny

                          Have not had any since I was a kid, use to trap them in a homemade box trap in the winter and sell them ready to go for $2.00

                            One of me Mums Corgis just had itself a good baby rabbit dinner the other night.
                            Stupid thing had its nest inside the dogs fenced in area!

                            Got frozen rabbit at a local Shoprite and have thought about picking some up but never have.

                              From the middle of this great land of ours looks like ya done real well my friend. Fresh taken rabbit is good eating too. Most of the time, I prefer to eat them fresh rather than after a 2 or 3 hour brine. Never hurts to have guests show up with food in their hands. Not sure what other food plans ya had, but hard to beat rabbit.
