  • Butts in the dark...

With the rain starting this morning I got my pork butts going after some technical difficulties. Got a butt rubbed down with some of Rich's rub. Looks like the weather is clearing in martinsville so we might have a race! A buddy of mine is bring bourbon later. Should be a good day. Pics to come so don't give me that "it didn't happen" stuff

Like I said... It was dark.

Got the pork butt in there.

Even the electric smokers can get some thin blue.

Looking forward to seeing the Q-slobber-shots. You're gonna like Rich's rub. I tried it on pork ribs yesterday. I used it a bit sparingly for the first use but the next ones I'll put it on thicker. I still have enough left to do a butt or loin.

Nice looking piece of pork ther Jeff, I'm guessing the wind isn't a factor?

I have to post up the spares I did yesterday, the wind was blowing branches out of my oaks trees so bad that with a little better aim, I wouldn't have had to added any wood to the fire box.

Sorry I got sidetracked and didn't finish last night. You are lucky you get photos at all I was so hungry!

I think this was about 8 hours.

Before removing. (I forget total time)

After being wrapped and rested for 50 or 60 laps. (may have been more. Beer dulled sense of time)

                              Pulled!

Great meal was had! Added some south florida finishing sauce to the pp. Put the meat on buns and had some beans on the side. I used the jack daniels chips since I had no chunks at this location. I do like the oak for smoking. For an electric smoker I feel I got a good product and if I had prepped ahead of time my pp would have been better. I did not marinate or brine and only applied the mustard and rub just before going on the smoker. Wasn't my best pulled pork but I wouldn't have complained having this anywhere.

Rich, thanks again for your rub! Very good stuff!!!
