Nice low key smoke today.. no time tables, no dinner guests, and winds less than 30 mph! Whoo Hooo
A friend of my wife wanted some pulled pork for a lunch she is throwing next week, so I took the excuse to fire up the comp rig and get a final burn in before next weeks comp. Of course I couldnt just fire up the rig for just two shoulders.. I rubbed up three shoulders, couple racks of spares, and some left over tips and riblets from the smoke a few weeks ago. Then threw in our Easter ham for a bit of extra smoke. About mid way through the day one of my cooks shows up with three fatties. A taco fattie, a garlic potato and hot link fattie, and a breakfast fattie. Not like I dont have room!
It was a great day to torture the neighbors. Lots of doors opening up with their noses in the air to see where it was coming from. Even had people drive up from a few streets down who had to know what was cooking. Got to love it.
