Mrs. Engineer is tough to figure out...she could easily be a vegetarian, and she doesn't have a sweet tooth...at all. In fact, I will try to get her to try cookies, cakes, pies, pecan pralines, etc, and she will give me one of those looks...you know the one, and say something like "You know I don't like sweets". I made these cookies one time, and she loves them. They have semi sweet chocolate and big chunks of it...and I added oats which makes them healthy! They are so good that Mrs. Engineer actually requests them. Tonight was one of those nights, so here they are. Make sure you got some milk handy...you're gonna need it.
1 ½ cups flour
¾ tsp baking soda
¼ tsp salt
1 cup oatmeal
¾ cup (1 ½ sticks) butter
½ cup granulated sugar
½ cup firmly packed brown sugar
1 egg
1 tsp. vanilla
1 cup peanut butter
1 pkg (12 oz.) Bakers Semi Sweet Chocolate Chunks
1. Heat Oven to 375°
2. Mix flour, baking soda, and salt in medium bowl – set aside.
3. Beat butter, peanut butter, and sugars in large bowl with a mixer on medium speed until light and fluffy.
4. Add egg and vanilla – beat well.
5. Gradually beat in flour mixture and oatmeal.
6. Stir in chocolate chunks.
7. Place formed cookies (approximately a tablespoon) on ungreased cookie sheets. Bake 10 – 13 minutes.
