                  OK....OK....here's the recipe

The recipe says to buy pre-made chewy brownies for the crust...I go a different route...

                  Coffee Brownie Cheesecake

1 Chewy Brownie Mix (any brand will do)
1/2 cup brewed double-strength coffee (room temp.)
( I substitute espresso for the coffee...I like the extra coffee flavor. )
3 - 8 oz. pkgs. cream cheese (softened)
                  1/2 cup sour cream
                  1 cup sugar
                  3 eggs
                  1 tsp. vanilla

Mix brownies according to package and pour into bottom of a 9" springform pan. Bake brownies 10 minutes LESS than the recipe states. Cool to room temp. Compress brownies with a flat bottomed glass. Refrigerate.

Beat cream cheese and sugar with an electric mixer at medium speed until well-blended. Add coffee (espresso) & vanilla and slowly beat in one egg at a time until smooth. Blend in sour cream and pour the mixture into the pan. Bake at 325* for 40 to 50 minutes, or until the center is almost set. Remove and cool to room temp. before refrigerating for at least 3 hours.

Note: I used caramel ice cream topping and crushed semi-sweet choc. chips on the cheesecake in the picture...I think if I were more ambitious, I would melt real caramels and drizzle that on top so it's not so runny.

                  ENJOY!

                  L8r,
                  Eric
