  • elk tenderloin with B&C rub and sauted morels and onions, morel rissoto

    using up last of my dehydrated morels, rehydrated, saved and filtered some of the liquid for use in the rissoto.


    liquids for the rissoto...


    out of synch but finished rissoto.


    found this in freezer, thought that was gone long time ago. usually they dont make the trip home but this one did,


    lightly rubbed with some a Blues & Cues rub... knew it had brown sugar in it so didnt want to over do it and burn this baby so went pretty light on it.


    on the weber




    had some sauted onions and morels in a foil bag on the gril to keep hot.


    here we go, coals were a bit on the cool side so i think the outside overcooked a bit. pulled at 125 and rested but seemed just a tad over cooked for me taste. still pretty good though!!!

    shown here with sauted morels oinons in foreground and Paula Deens morel butter onion in back.

            Nice just plain nice E man,buddy gave me a couple elk roast a wk ago or so.cut em up into steaks and grilled em .Almost makes me wish I were an Elk hunter

                  Morels and elk. Wow.

                  Isn't it amazing how those shrooms re-hydrate? It always floors me to see that.

                          That is damn beautiful right there.
                          And though I love the tenderloin with the B&C and the shrooms the fact you reserved the hydrating liquid for a risotto put it over the top for me.
