    Love the Chuckies!.....RonP talked me into the onion Au Jus drip pan filled with beer & wonder why I waited so long to do it. All Hail CHUCKY!
    One was done with Big Bob Gibson's rub & the other with CBP & Kosher salt. Liked both flavors.

                Looks good, looks real good.

                Gotta go with the on the veggie pan as well. Have a done those for awhile and it is excellent.

                        Ok, what is the Au Jus drip pan consist of? Sliced onion and beer only? then the drippings?

                        I love Au Jus, but what do I do? :-?

                          I just put in a can of beer & about an equal part water, Kosher salt, CBP and a sliced up onion. That was my first time doing it, but it was great. Maybe somebody can chime in on what they do different.

                            The way I do it isn't so much Au Jus as in juice but wonderfully flaovered veggies that you can eat alone or with the smoked meat.

                            Generally, I use onions, jalapenos, and mushrooms. I put apple juice and a bit of water in. The more you put in, the more you will get the Au Jus and the veggies won't be as done. Here's an example:



                            If you go less liquid, I only do apple juice and the veggies are smoked more, like this:



                            I love doing this with a brisket. Butts are good as well as a Chuck. Plus, you'll get some residual rub that will drip in if you're mopping/using a spray bottle with apple juice.

                            If you want some heat, just slice the jalapenos. If not, core them and remove the inside ribs.
