    Nothing too fancy; Finally got to break in the AMAZEN smoker today with some cheese. Smoked up 1 block of mild cheddar, 2 of extra sharp, 2 of pepper-jack, and 1 colby. Went for about 2.5 hours. Smoked with Maple for something different even though I have 5 pounds of cherry dust. Smells fantastic but had to rush off to work after mowing and trimming the lawn. They are wrapped in the fridge for now until I can vac pack them in the morning.

    Looks good.Need to try my a-maze-n smoker out.Here in the next day or two I am doing some Smitty's coated Jack.

      Depending how the family receives this batch I can see doing more. The smoker worked fine and I only went a bit over 2 of the passages for 2.5 hours partially filled. I agree with some previous posts that a larger one would be nice when I jump into the bacon kick.
