My wife has us on a healthy menu lately but this recipe really popped! Looking forward to some pork products this weekend.
Peeled and sliced the sweet potatoes and softened them up in the microwave. drizzled some oil, salt and pepper and grilled with the fish.
Mango salsa
2 mangos diced
1 red pepper diced
1/4 red onion diced
juice of 2 limes
1/4 cup chopped cilantro
mix in bowl and refrigerate
Thew the fresh walleye in a bowl with some italian salad dressing, salt, pepper, cayenne, and some Okies Seafood Splash. Grilled medium until it was all flaky and moist.
Plated, made for a great meal.
