  • Fish and Couscous a combo made for eachother

    Couscous is something that will cook in the same amount of time as fish. So you can have the one dish baked fish meal.

    Originally did this in foil packets for camping. Would make up the packets before going on canoe trips. Out of the cooler onto some coals. Just need a fork.

    I start with a layer of Couscous drizzle with evoo add half the water that the directions tell you to add. Layer on the fish( Talapia in the pics), season, cover with fresh herbs, lemon slices, pats of butter. Top with vegies like brocolli,asparagus,spinach,zuchini,etc... Foil it and bake untill the fish is done.

    The veggies herbs lemons butter and fish will drip juices into the Couscous on the bottom. Stir the herbs into the couscous. Some of the couscous will toast up and add a nice nutty texture and flavor to the dish.

    Sorry only 2 pics the little helper was getting pissed when i was shooting and not cooking!

    OK..I guess I should try this funny named stuff. I think I have had it in a salad tho, tabulea or something? I like that stuff.

      Tabouli usually has bulgarwheat. Couscous is basically ground up Pasta.

          You should play with it sometime. It soaks up flavors and brings some of it's own too.

                I eat a fair bit of cous cous. Also use it as a base for my veggy sausages.
                Great for a quick meal. with some pre-cooked frozen meat & sauce.
                cous cous take about 5 minutes, by which time the frozen food is defrosted and hot :-)

                Definitely giving you when I've got some.
