Can I just put the Amazn Smoker on the bottom rack of my WSM and cheese on the top rack (no heat) and just let it go ? It's pretty cool here today and I've never tried it

I see no reason why not. I use it in my MES with no heat all the time.Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
My best asset however is the inspiration from the members on this forum.

You shouldn't have a problem unless the sun makes it get about I think it's 70 degrees or so.....cheese is so simple it's wonderful to smoke, go for itJerod

You shouldn't have a problem as long as it is cool out. I use it in My MES and it doesen't raise the temp but a couple degrees.
