My car had it's annual mot and patch up wednesday and the boys at the garage did their usual bargain job of keeping it on the road for another 12 months.
We take a lot of cakes round there so I decided to make them some cookies for a change.
Made up this recipe (literally) thursday and popped it round with some of the five spice bacon jerky - Made some happy mechanics !
Peanut Butter & nutella cookies
6 oz self rising flour (or general purpose with 1/2 tsp baking powder)
3 oz smooth peanut butter (use crunchy if you like)
2 oz nutella (nope, cheaper brands are no substitute :-)
3 oz caster sugar (it's fine ground but not as fine as icing sugar - normal granulated will do though)
1 egg, beaten.
Sift flour into medium size bowl and add all other ingredients.
Using wooden spoon rough mix till it resembles big bread crumbs.
Then squish and knead with hands till it forms a ball of firm dough (good one for the kids this).
roll out on lightly floured surface to about 1/3 - 1/2 inch thick.
Use cookie cutter to cut out shapes. I did big round and small round.
Place on baking sheet and put into hot oven 400f - near the top.
Bake for 8-10 minutes depending on size of cookie.
Remove from oven when the edges of the outside cookies are just turning a darker brown.
Cool on rack before eating.
bear in mind cookies don't go crunchy till cooled.
These should have some crunch on the outside but still have some chew in the centre :-)
You can cram them pretty close together on the baking sheet as the mixture cooks up a little but doesn't flop outwards much.
1 batch of dough makes about 20 small cookies and about a dozen larger ones.
It was so quick and easy I made two batches.
The big ones got munched by the boys at the garage and the small ones went with me to my tai chi class and got munched at home as well :-)
General consensus is that they are pretty moreish. Also very very easy to make and hard to cock up. Over cook and they'll be real crunchy, under cook and they'll be nice and chewy - win win situation :-)
