    In the brine that is, but I figured if I mentioned Fishawn I'd get a few more hits.
    Going with Erains pickled fish recipe with some pickerel, Filleted them out but made a point to leave the Y bones in, and that ain't easy when ya been trained all your life to remove any bones. heres the test batch in the salt brine....not real exciting looking But Erain made me post it....
    I'll update when it's more exciting.

    I never ever done a fish like this (I've grilled them in foil and pulled the meat off the bones, but never done anything where you ain't concerned about the bones and hope they dissolve. But I got a lot of faith in Erain, He has to be one of the King-fishes around here.

    I have been wanting to do this since the first time I seen Erains post about it. It looks great and I'll bet will taste even better. Keep us updated

              Yeah... the pickling stage with the vinegar does it. Probably contributes to the available calcium in the finished product as well

                I love any kind of pickled fish !
                Pickerel's a kind of pike right ?

                Have to go look at erain's post too.

                My biggest problem is getting decent amounts of cheap fresh fish.
                The words cheap and fish are only used round here if you say: 'shit, fish ain't cheap !'
