chisoxjim 05-31-2011, 10:02 AM My buddy owns a bar in Wrigleyville, and does alot of pig roasts and crawfish boils for fun events. This is the 2nd crawfish boil I have helped out with.
1,800 lbs of bugs flown in from Louisiana. 20 cases about 90 lbs each case. Took my truck and a rental to go fetch them from Fed-Ex. My job is purging the bugs before they go to the pots to get cooked. In the mix is andoullie, hot dogs, garlic, corn, potatoes, lemon, spices, etc.
Crawfish season looks to be good, some large bugs for sure.

We did half the crawfish Saturday when I was there, then the rest Sunday.

yeah it was fun, a bit of rain as folks can see by my wet shirt. But the bugs were big and good.

I know the feeling...at comps i usually take a stroll at 3 am and never have a clue what else(entertainment etc.) is happening rest of the time...

heck yeah, always happens like that. Comp's, parties, etc. I spend so much time talking, cooking, partying, I forget to eat.

not sure about that one either,
he uses the cheapo pork/turkey ones as well. They are acutally pretty good.

We did about 1,000 lbs of the bugs on Saturday, the other 800 lbs were done Sunday and Monday.

it's nearing the end of crawfish season. the shells are getting hard.
I can tell you are not a rookie at boiling some bugs. Good job.

I am guessing it wasnt cheap to fly them up from LA. via Fed-Ex.
When I did 10 lbs. a few months ago I payed $5/lb shipped. Betting the price per Lb. on a large qty is much better. Picking them up from the Fed-Ex facility vs having them delivered is a better price thats for sure.
