                  That looks really good. Never had cedar planked fish before. How or what exactly does that planking do? Does it impart a cedar taste to the meat? I see them planks for sale in the grocery store...

                      I've done salmon quite a few times & soak the planks for a couple hours in water, then put the fish on top of the plank skin side down on the grate, over the hot coals. The plank will smoke/steam and sometimes catch on fire slightly, which imparts the smoked flavor onto the fish. Funny thing is, Cedar is not recommended as a smoking wood that I know of. I have a couple in the shed, might try some Shrimp and Tilapia also

                              I bought the cedar planks at a cooking utensil store.They are sold for cooking. I soaked them for about an hour. I bought a whole fillet of salmon and cut it into five pieces.I fired up a chimney of Kingsford and let the charcoal get good and white. I placed the fish on the boards skin side down. Placed the boards on the grates and closed the lid for five minutes then checked them. The boards get very hot and start steaming and smoking. The flavor is awesome from the cedar.I cooked them until the meat flaked a little when I put a fork to it. The main thing to me is not overcooking.I did not time it but it was probably cooking for 20-30 minutes.

                              Thinking of doing some gator meat dish later this week.
