  • amazing smoker / cheese

    Hey all,
    Just wanted to stop in and say hi, new here.
    I've smoked 16 different batches of cheese in my BGE w/ the amazing smoker.
    I've had great results, and some of my /peoples fav--Gouda,Canadian brick,Pepper jack have ranked highly. The only problem I've had was at times the maze didn't stay lit, and had to re-light , I keep my dust in a very dry area, and have bent my support legs underneath out and away from bottom as to not block air flow and keep everything clean. Any ideas on why it won't stay lit?

    Welcome to the Island...... Don't have an AMAZEN smoker but lots of folks here do.... Should be along shortly.

      Glad you joined us smoken chessehead, welcome to Smoked Meat!
      With the A-MAZE-N smoker one thing to watch is to be careful not to pack the sawdust too tight. It burns best with moderate pack to the sawdust.

        Sometimes you need to get some air into the smoker, that will help keep it going. I have a MES and open up the vent all the way and pull out the chip tray to vent it. Worked for me. And by the way...
        Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
        My best asset however is the inspiration from the members on this forum.

          Hey Fish, looks like a nice island, think I'll stay for awhile :)
