  • Sizzling Seven BBQ Contest in Gretna, NE. Results.

I was a judge at this contest today. I ate a lot of really good Q....and took a few bites that weren't so great. I also saw an interesting pork presentation that I hadn't seen anyone try before.

I have seen plenty of turn in boxes with pulled, chopped, sliced or a variation of these.....But one box we got at our table today had 6 fist sized hunks of pork butt. It looked like he had cut a whole butt into 6 hunks and put them in the box. It really worked though. Each judge got their own hunk that had plenty of bark, then when you picked it up and split it open to eat it-it was still hot and steamy on the inside. You had to "pull" it yourself a bit as you ate but it was cooked perfectly. Great texture, great flavor. Kind of a caveman approach.

Even a couple KCBS Reps in the room stopped by to see it. It was an attention getter. Chatting with the other judges at the table (after all scores were recorded) everyone seemed to like it.
