    Hi, I'm new to smoking. just got my first smoker. A Masterbuild Gas Smokehouse model. Figured I would get something cheaper for now to learn on.

    I have a couple of questions I was hoping you guys could help me out with. First of all, I've read that the thermometers on these things aren't too acurate. I got a wireless digital thermometer with a probe to use to get a more accurate reading. My question is, where is the best place to put the probe to get a good reading? I've been sticking it in the exhaust, but I'm not sure if that's right.

    Second, I've also read that you guys are putting needle valves on these things to control your temps better. Where is the best place to get a needle valve and where do I install it?

    First off...welcome to Smoked-Meat Jed. Dang... I always wanted to know someone named Jed!

    I have a "gutted" one I use for cold smoking with an AMS, or sausage with a hot plate. I use the exhaust port, hanging the probe about half way down. It is a bit warmer lower, of course... but that should be OK for you too. There's a few folks here that use them with gas tho..they'll chime in I'm sure.

    The needle valve goes just past your regulator. Here's a couple options:
