This is something I like to do at least once or twice a summer, when we can get a decent price on lobsters here in New England.
I thought this recipe was good enough, so I actually included it in my book.
Here's how we get started...bring a pot of salted water to a boil, and place your lobster in it for three minutes only...just enought to kill the poor little devils.
Then we'll put them on a baking sheet and go outside, because this is gonna get a little messy.
You will already have roasted a large head of garlic, and softened two sticks of butter...we'll mix them together with some minced shallots and freshly chopped basil.
Now poor Larry lobster gets split from nose to anus and opened up...lots of juicy moments here...be careful. You may want to use poultry shears to assist.
Now we pack the delicious little devils with the garlic butter mixture and place them on the medium hot grill for 9 minutes exactly, shell side down.
This particular day, I served it up with a Caprese salad, some more drawn butter and some grilled asparagus.
