    Me and Scott been chattin a bit about his WSM, i have been contemplating a different smoker for a bit... and from the input i have recieved and stored away from the likes of Rich, Alx, Chisox Jim, and now Fish, have resulted in this new addition.




    so i finished all the assembly, cleaned it up inside, pam treatment to the grates, etc... and started a fire in it. i didnot mess with any charcoal layout or using the coffee can trick. just lit a chimmney ordinary briquets and then when they were lit i put in smoker, added aprx 20 more unlit and a chunk of apple. left all the vents open and she quickly rose to above 300 using the thermo on the cover... i didnt break out the maverick to test accuracy yet. either way the temp is at the top of the dome not grate level temp so not of much value anyway...but good enuff for today...


    so i let it run at 300+ for a couple hours and i then start messing with the vents on the bottom, got it throttled back to around 250 deg and it hung rite to that temp pretty well.


    while all this was going on, i started to prep some ABT's. went with the now standby mango as well as some manderin oranges.












    also had some pork steaks and sweet corn...




    so i really enjoyed my first trial with the WSM... didnt do anything fancy, looking at doing a brisky next week for the 4th. will do more temp testing then. thks for stopping in!

                        congrats on the new baby, E! she sure looks purdy...

                        i gotta ask though: what is the big deal about WSM's? to me, they seem like a mass-produced UDS. are they any better/worse? just curious. I like my stuff to all look nice and shiny, free of dents and "redneck appeal", but i can't justify the extra cost.

                        who am i trying to kid? I have 2 fridge smokers. lol.
