  • All night Unadilla Day Cook

    Cooked for the town BBQ this past weekend. Rolled in Friday night at 11 PM and rolled out around 9 PM on Saturday night...with no sleep in between. It was a long one, but fun.

    It did pour rain and was cold as a Sumbitch and the heater didn't work in the camper, but nothing major went wrong. It got real hot and sunny later and I got a sunburned neck out of the deal.

    We cooked just over 100 lbs. of butts, 200 lbs of St. Louis trimmed spares, 80 lbs. of chicken 1/4s, 8 gallons of beans and 10 lbs of polish sausage.

    The set-up. The camper is BIL's dad's. The refrigerated Miller trailer will be ours in a week. It was a life-saver, and a great place to go when you get overheated.



    Chamber 1. The butts, there were 14 of them. I didn't get the pic with the chicken and beans and sausage on. It got hectic and I forgot all about the pics. Just imagine all the space around the butts filled with chicken, pans of beans and polish sausage.


    Chamber 2. The ribs. There were 72 racks in all. With the second decks on the rotisserie, we can get another 48 racks of ribs on in each chamber.

    Helluva setup! Heh..I read the title and thought "What the HELL is a Unidilla and how do you cook them?!?" Doh...LOL!

                  Holy cow what a smoker! That made my inerds tingle. You and the missus are a cutie patootie couple too. That smoker, wow, and the food looks amazing. I gotta go get a beer.

                      Nice setup, nice smoke dude, you are for real.
                      Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
                      My best asset however is the inspiration from the members on this forum.

                            Yeah, that is OUR smoker. Dad and I. He has never cooked in his life. He said he is learning a lot and enjoys spending the time doing it. We make a pretty good team.
