  • New Baltimore Lions Smoke on the Bay

    Pretty much same as last year. Not sure if i'm getting involved this year but it was a good contest last year with some great teams!

    BBQ Rib Cook-off

    Entry Fee: $50.00 per Team

    Cook-off Rules

    1. Registration Form and Fee must be turned in by Wednesday, August 10th to insure the proper amount of ribs per team.
    2. Each team will be provided five (5) slabs of ribs for competition cooking. Teams are not allowed to bring their own ribs or cook any other ribs. No exceptions. Number of bones reserved for judges to be determined based on number of judges.
    3. Teams are not allowed to pass out samples nor can they sell the ribs. No items are to be sold by competitors.
    4. Teams are responsible for all of their own supplies, utensils, ingredients, grills and smokers. Ribs will be the only item provided for the teams.
    5. Teams are required to follow standard food safety precautions.
    6. Alcohol is not permitted in the contestants / entrants area.
    7. Ribs may be cooked over a fire of wood, charcoal or propane gas. Teams may not dig pits. The cooking device of your choice should be the only object placed outside of the covered cooking area.
    8. Check in / Rib pick-up starts at 9:00 AM. Teams are allowed to start cooking as soon as they are set up. Cut-off for rib pick-up is 11:30 AM. The official start of the cook-off is 12:00 Noon. Teams will not be allowed to check in after 11:35 AM. No refunds will be given to ‘no shows’ or late arrivals.
    9. Judging ribs will be turned in at 4:00 PM - Sharp. No exceptions. A countdown clock will be at the judging station and announcements will be made. Please turn in the rest of the slabs cut into one (1) bone portions to the serving tables.
    Three (3) judging categories: Presentation, taste, and tenderness. First through third place prizes will be awarded based on the total scores of the three categories. Prize money to be awarded: $600.00.
    10. Team captains are solely responsible for their team members and their actions.

      Nooope, sorry! Course the 19 hour drive doesn't have anything to do with it.

            Well, I din't fare so well in this one. There was a tie for first place tho...rare. I finished one outta the money at 4. But..they did have decent ribs. Just something I'm less than familiar with. Floored me..IBP back ribs...huh...never know I guess.

                At least ya entered the contest. Me why. Never finished the drum, and I guess I felt like rakin weed and muck from the pond more. I forgot that they supplied the wibs. Good for you.

                  Sorry bout that Rich. But ya did well on the last one!

                  Just a general question. Why do most think St Louis spares is the way to go with comp ribs. I still like them bb's. Love the loin meat on the top of them. Yeah, bulker and harder to fit in a box, but they a tasty!

                      Yuppers. Almost too much meat on some of the slabs... at least the folks got a good $10 3 bone deal for the most part. Well, assuming all the entries were edible anyway ;{)
