  • Butts into Sausage.....

    Had plans on smoking a couple of butts and making sausage out of a couple, over the weekend and instead got carried away and made sausage out of all of them. Just kept it simple and made HOT and mild Italian, and added some crushed garlic and onion.



    Out of all four butts I ended up with about 15lbs of Italian sausage and 31/2 lbs of breakfast sausage.

        Brats, yes will be next thing for sure, have been trying to find some good veal around here that want strip my pockets dry.

                      good looking sossies.
                      It's easy to get carried away - and homemade sausages are soo good :-)
                      So what did you do with the shrimp in the ziplock bag ?

                      If you can't get veal - try making bratties with pigeon (dove) breast instead.
                      Works a treat :-)
                      Oh yeah and go for the recipe with eggs, heavy cream and nutmeg.
                      Making some up for sunday so I'll post pics of the whole proces then :-)
                      Making boer wors tonight - not a cheap sausage but a classic :-)

                        Nice sausages. Yep, it's easy to get carried away, but fun. I need to make some more breakfast sausage. Ate the last batch up Sun.
