                      Woo Wee! I do love me some catfish! They look great. I'd love to get a plate of that! Damn hook a homie up! Email me a plate or two please I'd cook me some catfish, but it's probably illegal in California

                          Well, ran into a glitch on the fish.First time smokin cats and I smoked them skin on and down.WRONG!They did'nt drain properly so I poked some holes in them and tried drying them in the smoker.It did'nt work so they are finishing in the oven for a bit to try and dry them out some.Also next time only going to brine for no more than 6 hrs.a little too salty.

                            We eat a lot of catfish down here but I've never smoked them. What kinda cats are those? The meat has a lot of color.
