  • Brisket, Ribs and chicken

    Well, I had a free weekend and decided to smoke a chicken and a small brisket for us just to have. Word got around I guess and next thing I knew I had another largebrisket and 2 racks of BB ribs to go on for other people. It was a good day.

    Here is the process,
    Both briskets Rubbed up and in foil for the night. Also made up the brine for the chicken and put it in later that night.

    This is the large one. scored the fat down to the meat


    The next morning got the smoker going about 730. about 8 put the briskets in for their smoke bath. Put the chicken on later. here it is spatchcocked and rubbed down with Montreal Chicken, garlic, and butter. Also put that mix in under the skin.



    here are the ribs just going on.


    Both briskets finished and getting ready to rest. I only get the slice one since the other is for a friend. :( oh well.




    Here is the sliced pic of the one we get to keep. It was tasty. A little dry but still good!

    My mom and dad decided to stay for supper after picking up his ribs. so we got to sample them. mmm. We made mashed potatoes, salad, beans, fresh corn from the garden. It was a good day...



    I hope you enjoy as much as we did... well.. i guess you can't enjoy that much since you only get to look...lol

                              Looks fantastic, that last plated pic makes it all worthwhile. Great smoke!
                              Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
                              My best asset however is the inspiration from the members on this forum.
