    Does anyone have a good recipe for dirty rice?
    I keep hearing about it and really want to try it.

    I found this on the web. although I have made it with some differnt ingredients it is basicly the same. I don't use the livers nor gizzards. substiute smoked meats (sausage) for meat part.
    Dirty rice can also be bought in a box now, but who would want to do that? OK, maybe if you don't have enough time to make it the Cajun way, but otherwise it is so much better when prepared from scratch! Dirty rice has been a Cajun food for many generations, and it will likely continue to be one for many, many more.

    "Dirty Rice"

    Ingredients:

    1/2 lbs. of chicken gizzards
    4 cups of chicken broth
    1/2 lbs. of chicken livers diced finely
    2 tablespoons of bacon drippings
    4 tablespoons of butter
    1/2 lb. of ground pork
    1/2 cup of chopped celery
    1/2 cup of chopped onions
    1/2 cup of chopped green bell peppers
    1/2 cup of chopped green onions
    2 cloves of minced garlic
    3 teaspoons of salt
    1 teaspoon of black pepper
    1 teaspoon of paprika
    1/2 teaspoon of red pepper
    1 teaspoon of Tabasco (my favorite Cajun seasoning!)
    1 1/2 cups of white rice
    Instructions

    Cook the gizzards in the chicken broth for 30 minutes.
    Take the gizzards out of the broth and grind them. Don't throw away the broth.
    Heat half of the butter and the bacon drippings in a pot.
    Cook the pork and the gizzards in this pot until the pork is not pink.
    Add the vegetables and the seasonings and cook another 5 minutes.
    Add the broth that you saved and the rice.
    Bring the pot to a rapid boil. Then cover and let simmer under a low heat for 15 minutes.
    In a seperate pan, cook the chicken livers in the rest of the butter for 5 minutes.
    Add the livers to the main pot and allow to cook for another 5 minutes.
    Enjoy the dirty rice!

        Thats a good recipe... You should try it with the gizzards & the livers... Thats what gives it the dirty color and a helluva good flavor
