  • Shoulders, eggs and thighs

    Fired up the Bandera this morning and threw in a couple of shoulders I picked up yesterday. Trimmed and rubbed them with evoo and my rub last night and threw them in the fridge. Using oak today, keeping temp 225-250. Eggs should be done shortly. I will be putting the thighs in later, they will be for dinner tonight.

    Ohhhhh smoked eggs..it's time for me to do them again! Looking forward to your in progress pics. The shoulders look like they are going to be fantastic!

          Eggs are done

          The eggs took about 3 hrs to be done. They turned out perfect! Yolks are done, light smoke flavored white. Yummy!

            That looks good, another for the list! Bet they be great deviled or in a salad. How long were they in there, temp?

              They DO look good. I have thought about doing some but never did. Love eggs no matter how ya make 'em. Smoked egg salad, yum.
              Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
              My best asset however is the inspiration from the members on this forum.

                225-250 for about 3 hrs. I usually check one after about 2 hrs to see how they are coming along, each batch is different.

                          They started out about 10 lbs each. The pic of the eggs was before they were peeled.
