  • Thai Spiced Shrimp with Asian Inspired Salad

    Been so hot lately, don't hardly feel like cooking, indoors or out. Wife suggested making a noodle salad that I made in the past, and putting some grilled fish or shrimp on top. Sounded quick, lite, and easy, so I went for it. Picked up a bag of 26-30's for cheap, P&D'd and skewered them, tossed them in some Penzeys Bangkok Blend and hit them indirect with some maple for about 15 mins. Salad was made with some regular cooked spaghetti, 3 medium carrots, peeled into ribbons, a peeled and seeded chopped cuke, some cilantro, and tossed with this dressing. No outside cooking pics, as the camera lens fogged up from the humidity as soon as I stepped out the door. Heres the plated pics:

        That looks really tasty, nice stuff Chef!

              i here ya man about the light eating in this heat. been munchin on salads for a meal here too... looking good. never did a noodle salad but mabe should try it out. sure looks good!

                    Another thing you can do, is skip the noodles, and throw it all on a crusty french or ciabatta roll, and make it into a bahn mi. The addition of a few thin slices of jalapeno won't hurt either.
