We can start with the beans soaking over night. (I know exciting)
Recipe
½ lb black beans
2 Tbs EVOO
½ onion chopped
¼ cup bell pepper, chopped
2 cloves garlic
1 tsp oregano
4 Tbs Sazon (Sofrito)
2 Tbs white wine or cider vinegar
¼ tsp GBP
Rinse then in a large heavy pot, soak beans 4 cups water overnight. DO NOT DRAIN WATER.
In a sauce pan put oil on medium heat. Add onion, pepper and garlic, cook till tender. (5 minutes)
Turn heat to high under beans.
Add remaining ingredients to sauté pan, stir then add to bean pot. Bring to a boil, reduce heat, cover and simmer till beans are tender. Serve over rice - serves 4.
Before we can get to the beans I was out of Sazon (Sofrito) So..
Ingredients:
* ¼ cup chopped onion
* 3 tablespoons chopped green peppers
* 3 tablespoons chopped sweet red peppers
* 3 tablespoons chopped green onions
* 3 tablespoons tomato paste
* 4 teaspoons chopped fresh parsley
* 4 teaspoons chopped fresh coriander
* 4 teaspoons olive oil or 4 teaspoons vegetable oil
* 4 teaspoons white vinegar
* ½ teaspoon dried oregano
* ½ teaspoon sweet paprika
* ¼ teaspoon salt
* 1/8 teaspoon hot sauce
* 1 (2 ounce) jar diced pimentos, drained
* 1 garlic clove, minced
* ¼ teaspoon salt
* 4 teaspoon coriander
Mess #1
Directions:
1. 1 Combine all ingredients in a blender; process until smooth.
2. 2 Pour into a saucepan; bring to a boil.
Now for the beans
Mess #2
Beans starting to warm up on the left, Black Bean aromatics starting on the right.
Pork marinated in Mojo (from another post) added to the mix.
The rest of the "mess" mixed in and simmering.
Pulled pork from the freezer added.
And all mixed in with the beans. Still simmering for another hour.
Before we finish the beans we gotta do da rice! One cup with Porcini mushrooms for some more flavor. Boy do the Porcini smell good!
