  • Well, It's almost the weekend..... .What you got planned for the Smoker-BBQ-Canner???

    Weekend straight ahead of us..... What you got planned?...... I got a twin pack of cryovaced butts in the fridge..... Not sure what's going to become of them.... Maybe some sausage?????..... I dunno.... I get to man the grill at the family pool-bbq-party Sunday, so I will try to catch some video.....

    Scott buddy, I have been puting in long arss hours and have not been getting in my cooking or forum time.

    I have been wanting to do some pulled pork too or maybe a couple briskey flats. I'm leaning towards the pork. I was thinking of starting off in the Yoder Wichita stick burner for the first 6 - 7 hours then moving them to the YS640 pellet smoker and setting it to auto pilot so I can concentrate on the important things like reading this forum and drinking cold beer.
    Smoke it.. and they will come!

      Nothing at all. Gonna be too hot and humid again this weekend. They have us under an excessive heat warning up to the middle of next week. I am looking at the first weekend in August to go out to the smoker next. Brisket and beans maybe.

        They say the heat is going to break out here of Sunday, so I'm planning on having some really good friends over and we'll put a beef tenderloin on the EZ-Q and serve it with some horseradish sauce, some chimichurri sauce, probably some Hasselback taters and grilled asparagus.

            My Son is coming for a visit this weekend and it's supposed to be hot as hell again.
            He is a chef so whatever I make it better be good.
            I think we might do some ribs and a fattie or two.

                  Saturday got a gig helping to serve 200 people BBQ. Been cooking the past couple weekends to get ready. 4 butts, 3 whole briskets, and 6 trays of beans. Also grilling burgers, dogs, and chicken in downtown Philly with temps forcasted to be 105 degrees. Can't wait.
                  Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
                  My best asset however is the inspiration from the members on this forum.

                        Another nice and hot weekend on tap. Im a big fan of summer.

                        Picked up some sausages out @ Reams Market out in Elburn for a cookout Saturday down by Lake Michigan. These cats make some great sausages, the owner is in the Cured Meat HOF.

                        I grabbed up:

                        - World Champion Brats
                        - Weisswurst
                        - Hot Links
                        - Hungarian Sausage

                        Ill lug one of the Weber kettles down with me and may throw something else on. Probably get some buns and a loaf of white bread for the sausages, grill some onions, and have some kraut and a few mustards on hand for toppings.

                        Sunday - TBD.
                        Just because you welded some shit together doesnt make it a WSM.

                            Well...if I can manage to remember to buy charcoal I plan on firing up my new to me weber kettle....

                            Gotta get the place ready for my 4 yr olds bday party next weekend, might even try to sneak in a batch of brats.

                              I don't care how hot it is. Me smoker's in the shade. If I can get to town I'm gonna go to that fancy shmancy butcher shop and get me a real prime rib. Been craving me some. If I don't get to town I'll pull something from the freezer and get on it.

                              I got me a new arsenal of woods to try out - sugar maple, cherry, and apple.

                              Having more that one wood is good.
