So I was on my way home after visiting HawgHeaven Phil at the Mount Holly, NJ BBQ & Blues festival and lo and behold, the truck all by itself pulled into the True value hardware store. I knew the rest was destiny. :lol:

Well, since this was one of those things that ya don't plan, I caught myself in one of those quandries because all my meat is frozen solid and it's too late to thaw for tomorrow. Butt alas, the female unit came through and picked up a small pork shoulder to save the weekend and my sanity. :banana_smiley: So, we're gonna go with that plus a few more things I'll come up with after a few. :cheers: Don't be misled people, this baby will rock tomorrow! :bounce:

That's a smokin' machine in it's simplest form. Might I suggest dropping the water pan right away and going deflector?

Hmm I ASSUME they come with a water pan? I have not used mine in the 18 incher for 3 years. I use either a small grate covered in foil that fits on the pan holders, or I did buy a 16" pizza pan now that works fine.

Well, go on and use it... but the unit really does not need it. WP's are basically temp moderators. You can adjust intake pretty well with the bottom vents, and not "scrub" heat with a WP. But you'll need a deflector to keep the heat from going straight to the food, and to stop fat from hitting the fire.

Play with it...then we'll talk :thumb:

Way to go Jim!!!!! You won't be sorry!! Gee, I'd like to think I was of no influence for that decision after the visit at Mount Holly... :whistle:

BTW, I used no water in the pans... I covered the inside of the pans with aluminum foil, loosely crumpled up a few pieces of foil into balls and placed them in the pan, then foiled over the top, leaving a "dent" for the grease to gather. Worked great!

Got that from a guy at Middletown who used 22.5" WSMs.

This is a great area of discussion I think. I have only 2 smokes to me credit on the WSM's and have used water in the pan both times. But, Phil & Rich (prolly a lot of others here also) do not use water in the pans.....:noidea:

Scott, I know ALX doesn't use water also. I'm not sure if the multi-layer foil really does make a huge difference, butt it didn't hurt for dang sure this weekend... temps were pretty stable.

Ya just gotta experiment. I love these WSM machines! :thumb:

Interesting...well, got her fired up right now and am using the water pan. Mikey sent me a tutorial on using it and the whys and so forth. I have to tell you, had her running at 225 for almost 5 hours without touching it. In fact, just a few minutes ago threw some more blue bag at her and we'll see what happens the rest of the way.
No Phil, no influence at all...:lol: :whistle::whistle::whistle:

They really are fun little smokers...The team that won our comp this weekend power cooks on em using a stoker....3 years ago we used 4 18 inchers as our comp smokers...did perty darn good...

They do a mean high heat chicken as well..I did a 20 pound turkey on mine about 10 years ago as well(barely fit though).....I like to add 2-3 lit funnels with no water and a few wood chunks...she will hold 325-350 degree for 4 hours easy..Call it me smoke oven..:thumb:

Second time did minnion on the 22 and it seemed a little more stable for a longer time period. I dunno, I guess experience is the real key. Just gotta put in the thyme to see how they work & what works best for you. :noidea:

yep...just play around with different scenarios...we have a 22 incher as well....did 6 eight pound butts on her once...set and forget...:thumb:

Bingo. Start out by the book...and play. It's OK to play with your food...AND smoker...here. We won't tell a soul. Well, other than folks who understand such fixations anyway :lol:
