Mark thought the paprika flavor was a bit overwhelming... did you get any of that?

And as far as the "Whang" portion..any vinegar bite? (The ingredient was powdered vinegar, BTW... think it might need more tho.)


I tried out the hot wing dust yesterday. The heat was ok, taste and smells like Cayenne. For some reason the extra heat made the paprika stick out...too much. Kinda like eating paprika wings.:noidea:

Rich I used the whole package on one dozen wings as per direction. Alex spread it out a lot thinner. Me thinks that would make a difference. Might change the profile entirely.

you might try adding some dried ginger powder - it's surprisingly hot and gives a different heat to 'pepper' hot (chilli, paprika, black pepper etc)
In fact combined with paprika it's pretty damn good and givesa surprising heat. (see rub I'm about to post lol)

Vinegar powder or acetic acid ?

Hell if you want to do the job properly with an entire range of kinds of heat throw in some low temp dried horesradish powder as well. I make a horse radish relish that will unscrew your head (when I find some smallish plastic jars/pots I'll send you some - I know you're a horseradish wimp rich, but it's just so much fun to watch other people trying it neat :bounce:).
Haven't yet had the courage to try drying horseradish root though.

It's bad enough cutting it into chunks wet - to run it through the dehydrator for 12 hours or so - could be like producing my own tear gas.
I suppose i could run it over night and wear the respirator into the workshop (where the dehydrator is) in the morning lol.
