  • Rip off, copycat, doppelganger, shameless stolen recipe - peach cheesecakes :-)

    Saw 'em - had to make em.


    Only used 4 peaches - but full 8oz cream cheese .
    Had to scoop the pit holes a bit bigger as they only had small stones.



    Only change I made was to cut the sugar in half (1/8 and a bit cups). Which seemed spot on with 8oz cream cheese to me. 4oz and 1/4 cup - would be way too sweet for our palate, even 8oz with 1/4 cup would be pushing it.

    So 4 peaches with lots of filling - heavily loaded peaches



    Filling kinda slumped during cooking, but was firm enough to stay with the peaches when I lifted them off the baking sheet.
    Would have been perfect amount of filling with another 2 peaches.



    No caramel or nuts just a scoop of icecream for serving.



    They went down very well - a definite keeper and a really good dinner party dessert.

    I had one cold for breakfast too. Me I prefer them from the fridge - but they were pretty damn good warm as well

      Those probably wouldn't hold up too well shipping all the way to Colorado. I may as well just take a trip to Georgia. Looks great, Alex.

        They look wonderful, Alex! Glad you liked them and ice cream would be perfect with them. I am making more tonight for a birthday party at work tomorrow.

                  doesn't have to be peaches. Should work with pretty much any soft fruit (probably even apples)

                  I like the sound of the mango ones, nectarines would work as would large plums.
                  Maybe even some small sweet squash or baby pumpkins

                          Since seein Becky's I need to try this. I may cut back on the sugar meself, not that I have to. Lookin good Alex but why is there cloves of garlic all around your plate?

                            Now that's a novel thought......making the cheese cake right in the fruit itself. We grow some mighty tasty Elberta peaches here in my area
                            and I'd say going easy on the sugar in the cream cheese mix would make sense as the fruit would carry the sweetness for this dessert.

                            Elberta Peaches are probably the #1 Cash Crop Peach in the USA
                            and the Belle of Georgia is #1 for the white peaches.

                            What variety do you use for this in the UK ?
