  • smoked ice cream

    i had a friend ask me today if he made a batch of homemde ice cream would i smoke it for him.
    my question is has anyone ever done it and would you cold smoke it or on the smoker with a little heat?

    Um . . . how are you going to keep it from melting?

    Maybe smoke some toppings or nuts for the top?

    Are you sure your friend isn't screwing with you?

      You could cold smoke it in a fridge that worked but.... Hmmmmm. Never heard of that one. Now if you put nuts or fruit in it and smoked them first....
      Tell your friend he has his process wrong, gotta smoke the stuff in the ice cream first I think.

        I did it last winter and it came out awesome. But everone else thought I was nuts. heres a copy of the post on SMF.


        On a bet I'm smoking some vanilla ice cream this morning. I'm really not sure if it will take on any smoke or not, but I know I'll win the bet.

        I built a new cardboard smoker with a side fire box and 4" tube to the smoke chamber. The brown char-broil box is just a stand to hold the smoke chamber above the fire box. the tube is feed thru it to the smoker




        Built a fire with 2 briquet's and some maple sticks;



        with some trial and error I got it running nice and cold, but then again it's only 10° outside. The warmest the smoke chamber got to so far is 25°;



        Here's the ice cream sitting on a cold piece of steel wrapped in Aluminum foil;



        Nothing to do now but watch and wait. It's been almost an hour now and will probably go one more.

                        lol great idea for the winter.

                        so what did it taste like ?

                        Making smoked icecream in the summmer, you basically would cold smoke any solid ingredients: sugar, any fruit, nuts, chcocolate etc.
