  • pork loin and shoulder muscle for lunch meat and i did a test run on MH pork brine

    so i am just over paying extra $$$ for things i can make at home. lunch meat is one of those items, when i make it at home i control the ingredients and i gain increased quality.

    i took a whole pork loin and i cut it up. i reserved some center cuts for the grill and i brine each end (about 3#'s each) in Mad Hunky pork brine. i dusted one with mad hunky rub and one with damn yankee rub.

    the beef is a shoulder muscle injected and rub with capt dan's basic rub and injection.

    beef muscle, funny i cooked to medium well. the smoke ring is pink and the center is grayish pink.

    i sliced up or cubed the end and plated them with some yellow rice, a squirt of damn yankee red sauce, a glass of sweet tea. dinner is served.

      Nice meal! I hear ya bout the lunch meat. The beef looks med well or well from here. The P loins look wonderful. Nice work!

        Looks awesome Marcus ... I've been trimming well, then cutting chops outta the loins & using the trim for sausage.... Wife likes the totally lean, thinly sliced chops & I like all the stuff left over for sausage

        Man, that beef with some horseradish on a sammy would be killer

              All looks great Marcus, gonna make some great sammies.
              Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.

                          looks like you are set for a bit on sammy meat!!! beats buying it and like you say, you know exactly what your getting. looks like some good stuff from here... dunno if I woulda took that roast up to med well but thats me, you may like it different. nice job and heck of a smoke ring on that beef!!!
