so i am just over paying extra $$$ for things i can make at home. lunch meat is one of those items, when i make it at home i control the ingredients and i gain increased quality.
i took a whole pork loin and i cut it up. i reserved some center cuts for the grill and i brine each end (about 3#'s each) in Mad Hunky pork brine. i dusted one with mad hunky rub and one with damn yankee rub.
the beef is a shoulder muscle injected and rub with capt dan's basic rub and injection.

beef muscle, funny i cooked to medium well. the smoke ring is pink and the center is grayish pink.
big ol stack of sandwich beef
i sliced up or cubed the end and plated them with some yellow rice, a squirt of damn yankee red sauce, a glass of sweet tea. dinner is served.
