ECB and AMNS?

  • ECB and AMNS?

    Well, I got my AMNS in the mail Saturday and haven't had time to try it out. I bought it with the intention of using it in my UDS, but hopefully that will be full of brisket tomorrow. I'd like to do some japs and some salt tis weekend while I'm up at the lake, but the only smoker I have up there is my ECB.
    Anyone tried using a AMNS in a ECB and have you had any draft problems?

    You might have issues with the ECB, as it's not known for air control

    Perhaps it's gotta be treated like chips alone...foil over it?

      Hey Rich. I also have a CharBroil that looks like a ECB, but the thermo that went in the top is missing leaving about a 2" hole. That might give me some air flow.

        I meant TOO MUCH airflow... an AMNS might just flame on. ECB's are wide open at the bottom.

            I put a piece of steel over the bottom of my ECB that I cut from the bottom of a drum. Turned that ECB into a fantastic mini-drum. The holes that were left for the peg leg hardware make the perfect size for air flow, not too much, not too little. I just put SS bolts in them to control air and temp. With all the holes wide open that drum will get right up there to 350°, and if I put a couple of SS bolts in I can keep it down to 225° and real steady. It'll burn 8 hours on a load of 6 pounds of charcoal. Now, thats with out wind or rain. Get some wind, rain or both on that ECB and that thin metal just lets the heat go bye-bye right now. Lucky for me, here in Kansas rain hasn't been seen much this summer and the wind is easy to deflect.

              The thing is, I don't want any heat in the ECB. I just want to use it as a cold smoking chamber using the AMNS. Oh well, all I can do is try it I suppose. The darn thing is black so I'm going to have to put a patio umbrella over it to shade it so I don't end up with Richeese. It won't matter when I put some peppers, salt and garlic in it though.

                  I've used my ECB Gourmet to cold smoke with the AMNS with great results. Granted, it IS modified so I can control the airflow. With the AMNS, I just leave it wide open...it raises the ambient temp by about 4-5 degrees. I've done cheese when it was 70 degrees outside with no ill effects.

                  I think as long as you have the AMNS inside your ECB, it probably won't catch enough breeze to "flame on".

                    you do the mods i did with the gourmet............you can control heat very very well..........i use the amns(?) it that the cold smoking amazing smoker? if it is i use it with great results with a ecb.............been using one form or another of a ecb since the late 70's.

                    There is a couple stickies of the mods I have done to my ecb. You do em, you can control the heat very well.

                      A properly modded ECB works just as good as a 18" WSM, just a slightly smaller cooking area. 15" as opposed to 18".

                      When I get some time, I'll post my mods for the ECB Gourmet.

                      No doubt, a stock ECB sucks you know what. With $20 in mods, and a bit of handiness, they rock.

                      Most of the cook pics I posted in my newbie welcome thread were cooked on my $59 ECB. Including the best rack O' ribs I've ever made.

                        I guess I din't pay much attention, as I have never had an ECB, but they would help I see. Thanks for reminding.
