T.H. got it right goetta. It is kinda a Cincinnati Thing. Just tried a batch last weekend. Recipe attached. With the sage and bay leaf I used both. the recipe needs a little tweeking both with spices and cook time as mine did not firm up as much as I would like however it was gooood. I also eat mine with syrup and butter plus a couple of over tenderly eggs.

"My Aunt Esther Keller's recipe. I am 74 years old - she was at least 25 years older than me, so this recipe has been around a long time", Joan, a Loveland resident, wrote. Her Aunt Esther told Joan she never weighed the meat and usually adds more than the recipe calls for. She also said you could add a bit of ground cloves, too.
8 cups cold water
1 pound ea. ground beef and ground pork
2 cups pinhead oats
1 medium onion, ground with pork
2 teaspoons salt
1/2 teaspoon pepper
1/2 teaspoon rubbed sage OR two large bay leaves
Place ground meat in water, breaking up with fork while bringing it to a boil. Add rest of ingredients. Cook for l hour, stirring frequently. Goetta will be thick when done. Pour into greased loaf pans. Cool. If it's a little too soft to slice, make patties. Dip into a bit of flour and they will fry up real crisp.

OK ... just tried it. It was OK. Kind of fell apart while frying up, so it was kind of like a sausage hash without the potatoes but with the oats. Had it with a couple of eggs and toast. Will try again tomorrow and use Kratz's suggestion of using flour to crisp it up a bit.Dan

Is that what that thing is, an anteater.
They don't eat ants in the wild just termites. No teeth enamel so ants are too hard to crunch while soft bodied termites can be eaten easily.
So just what do you lot have against oats anyway ?
You'll eat concentrated soya protein, maize meal and all sorts of other junk so why not oats a food that actually does you good.
Plus it's physical properties for binding and retaining moisture in meat products are unbeaten.

If it were me i'd double the meat content, lose all the water and halve the oats. And that'd make a pretty decent sausage :-)
