Well... after the whooping I took from Becky , this entry isn't really worthy of posting but the pizza was damn good!
Green Chili Pesto Pizza with fresh maters:
I was on a fresh pesto kick when the contest came out, was also kicking ass on roasting green chilies, so my simple mind said WTH!
here goes:
Green Chili Pesto:
2 cups fresh roasted green chili (substituted this for basil leaves)
1/2 cup freshly grated Asiago cheese
1/2 cup extra virgin olive oil
1/3 cup peanuts (instead of pine nuts) (can substitute cashews or almonds)
3 medium sized garlic cloves, minced
Salt and freshly ground black pepper to taste
Started with a sourdough flapper brushed with olive oil then chili pesto
Gave that a thick layer of Pizza Cheese and a laser thin slice of home grown mater.
That went in the grill, on the pizza stone, with a hickory smoke bomb.
I should have sent this to Becky as an appitizer for her entry
Plated with one each of the chilies me and Bassman are growing and enjoying this summer.
bottom line - had a blast doing this and really enjoyed seeing everyone's awesome dishes. The creativity and skill some of you have blows my simple little mind!!
