    Wooo Whooo...
    The loin is 4.34 lbs, I did not trim the fat, seems more like it on than off so for the first go around I kept it on...

    Naked as a j-bird...


    now rubbed with 4 1/3 T TQ 4 1/3 T raw sugar and 4 T Smitty's... she wants to be in every food shot now... this phase should pass soon.. Im hoping!



    Will let ya know how it goes in 11 days!!

        Ha.... Shes on the road to some greatness.. If you want a little more heat on your CB.. After you soak and taste test.. Pat dry and add a little more Smitty's on before it hits the smoker.

                          Looking good.
                          But 11 days ?
                          I've pretty much dry cured everything for about 7 days so far and it's allways been cured all the way through.

                          Just put a 3lb 10 oz piece of boned out leg in to bacon up. It'll be done well and good in a week and that's way thicker than your loin.
