  • Homemade Tomato Ketchup

    SOMETHING I DO AT THE END OF TOMATO HARVEST EVERY YEAR...REALLY NOTHING LIKE REGULAR DEAL IN STORE AND BESIDES NORMAL USES IT MAKES A GREAT BASE FOR SAUCES.... IF YOU MAKE YOUR OWN BBQ SAUCES..

    MANY DIFFERENT VERSIONS HOWEVER

    1 and 1/2 gallons chopped meaty,ripe red maters
    2 cups chopped onions
    2 cups cider vinegar
    1/2 cup seeded and chopped red bell
    1/2 cup celery with leaves
    4 cloves garlic,pressed
    2 tablespoons fine sea salt
    1/2 cup packed light brown sugar
    1/4 cup granulated cane sugar

    SPICE BAG

    2 tablespoons coriander seeds
    1 tablespoon yellow mustard seeds
    1 tablespoon allspice berries
    1 tablespoon black peppercorns
    1 bay leaf
    1 teaspoon whole cloves
    1/4 teaspoon or more crushed red pepper(i use cayene)


    Maters( as you can see not mid-season quality and need cut out any bad areas) I just dont like wasting anything and these still tasty,juicy

    Bring only the chopped mater to a boil(i skin and core them) and then simmer 30-45 minutes or soft...stir occasionaly....






    add everything else and simmer 30 - 60 minutes minnimum(depends on how juicy maters)





    Cheese cloth spice bag and spices









    Squeeze out bag and crank mater mixture thru a foodmill and put liquid back on stove until it sticks to back of a spoon....





    Back on stove to thicken




    Water bath ten minutes in canning jars and let sit minnimum 2 weeks...I usually let age 5 months to a year as the flavor really develops more...

            great lookin' stuff big sexy A........i was wondreing why seed and core if ya using a mill? before i saw the mill parti was thinkin' be lazy (or efficient) and just mill it. then i saw you used one so that's why i asked......do the seeds and skin impart any bitterness or are old habits just hard to break.

                  Thanks for posting Alex. Was just trying to figure out what to do with the remaining maters. Got enough salsa and mater sauce for the year but hate to have them go to waste.

                          Yanno... I might not think that stuff a waste of a tomato... I suppose I should try making some, because I detest the sugar-laden crap you can buy.

                            Probably more just habit Rob....I skin and core my cannned maters and i guess since i grew up doing that with my mom.... it is just what i do now etc...
