  • First Cheese Smoke

    Well I decided to try smoking some cheese last night. I used my amazn smoker and did two blocks of cheddar and one block of monterrey. I used hickory and smoked for about two hours. Im a virgin at this, so hopefully it taste good. Here it is just going on the smoker.


    Here it is a hour in.


    Two hours in and about to come off.


    Here it is off the smoker. Nice color. Hopefully I didnt smoke it too long. Not sure that I want extremely heavy taste.


    Here it is vac packed and ready to go in the fridge. Taking two blocks to our football get together tomorrow. The other will get to set a couple weeks.

          great looking job on the cheese.I like cutting them in half or thirds so you have more surface area for the smoke to get to

                  Lookin' good! It's gettin' to be that time of the year.
                  Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
                  My best asset however is the inspiration from the members on this forum.

                          Looks good and smoky...
                          Personally I only smoke mine for about an hour...but I must be the only one who does it that way...two hours seems to be what most folks do it for...

                            We ended up eating it all this weekend. Sucked at first. Tasted like an ashtray. I cut all the outer layer off and it was pretty good. The outer layer was WAYYYY to smoky. Any thoughts? Too long? Too thick of smoke? I used the a-maze pellet with hickory.

                              I am with craig on the hour or so....I use light woods like apple....I have never used pellets so not sure what kind of intensity of smoke they put out...
