Found this recipe in the booklet that came with my DO but it was way to much for just the 2 of us so i adjusted.
Original recipe:
12" DO
2 lbs bulk breakfast sausage
1 lbs hashbrowns
8 eggs
2 cups cheese
What I did:
10" DO
1/2 lb breakfast sausage
Enough Southwestern hashbrowns to cover the bottom of the DO 1/2" thick
5 eggs
I wanted cheese but left it at home.
Fry and crumble your sausage first over full bed of hot coals and remove sausage from DO and let drain. Add hashbrowns and fry a bit until they start to brown. Smooth out evenly over the bottom of the DO. Reduce heat to 6 on bottom and 12 on top of DO. Add sausage to top of hashbrowns. Crack eggs, scramble, add salt and pepper to taste, and pour eggs on top. Add DO lid and bake for 20 - 25 minutes or until eggs are set. Cheese would have been added when the eggs would be about half way done.
First time I tried this and it was wonderful! The southwest hashbrowns really kicked it up a notch!
I was worried about the hashbrowns sticking but they did not and clean up was easy.
