  • Bread & Butter Japs

    Between the post that Hoser did on them, http://www.smoked-meat.com/forum/sho...lapenos&page=2,
    and Gunslingers, http://www.smoked-meat.com/forum/sho...tter+jalapenos, I couldn't decide which one to make, so I made a variation of the two.

    Started with some Jalapenos and Garden Salsa peppers fresh from the garden this morning. The red Garden Salsas and the small Tobasco's are set aside for a different experiment.....

    Cut the stems off, removed the seeds and veins until I had 3# worth of peppers.

    Peppers chilin in the sink.


    Spices and such. This went in with the vinegar.


    TaaDaaaa. Bread & Butter Japs. Gonna let these sit for a few weeks and see how they taste. I'm thinking they will be kick ass as a burger topper or on a nice hot dog

    Wow! that is a great idea, I love bread and butter pickles. How much for a jar?

          CP, once you have our peppers in hand, I'd say roughly an hour to 1 1/2 hours tops. Longest part is cleaning out the peppers. Once thats done, its just a matter of betting the liquid up to boil, adding the peppers to the mix, getting it to a boil again then adding to the jars. 10 minutes in a water batch and your done.....

          By the way. I have broken jars before by adding hot items to cool room temp jars. When I hot pack now, I add about 1/2" of water to each canning jar and throw them in the microwave. Nuke em for about 2 minutes till the water boils. Take one out at a time. Dump the water, jars are hot, add the stuff to em.

            I won't answer for Todd, but the bread and butter japs & pickles I have done in the past few weeks tasted great after processing & shortly after..... I think it's the sugar/vinegar & Turmeric that kicks them into gear right away.

              Todd thanks for the cooking timeline and tips, my mom has a good recipe for pickles that me neighbor has used with good results... I need to catch up with you guys on this.

              I agree Scott they can be eaten fairly soon.. I have not had B&B Japs yet... I'm after this when time permits
