  • Try this with smoked chicken breasts

Dry rubbed & Hickory smoked some chicken breasts the night before Easter & was going to bring them to a relative who loves chicken. After shredding them by hand I was going to vacuum pack them & I though that they might think they were too dry.
So as I had had a few beers by this time I decided to pour some EVOO in with the shredded chicken, along with some more of the dry rub, mixed up good & vacuum packed. Well I must not have been on my "A" game the next morning because I forgot to bring the shredded breasts. I opened the package up a couple days later & found the chicken breasts to be nice & moist. I guess all that moisture redistributes evenly after a while?...I did it again last night & am pretty happy with it.

Ahhh well done! Any oil, but of course EVOO brings a flavor.. will both "lubricate" and prevent further moisture from leaving the meat.

The breast with EVOO has to be defined as healthy- read below...

I can't say it's healthy, but warming up pulled breast with a bit of rendered bacon fat ain't bad!

That chicken looks scrumptious even through the bag. I must be hungry.

Beavis and Butt-head would have had a ball with this.

Rich, I've heard this works on post menopausal women too.
